Banana Bread (updated 6/30/16)


This recipe is my version adapted from Whole Health MD (link on side bar).

Banana Nut Bread w/ Dates (pictured on the right)

Preheat oven to 350 F and prepare 9 x 5 loaf pan, oiling and flour dusting bottom and sides.

In mixing bowl combine:

1/4 cup extra virgin olive oil
1/2 cup of raw sugar or raw honey
2 eggs, large
3 bananas, small to med. mashed (I use ripe and through in bowl to mash as it goes)

Add to wet mix:

1/2 cup golden flax meal (or other)
1 cup organic white wheat
1 cup organic all-purpose
1 tsp baking soda
1/4 baking powder
1/4 tsp. salt
1/2 - 1 cup chopped walnuts (opt.)
1/2 cup chopped dates

Stir all together until just combined.
Spoon batter into prepared loaf pan and bake for 50 -55 minutes or until toothpick stuck in center comes out clean. Cool a short bit. Invert onto cooking rack. (2/20/09)

Using above basic recipe and changing up a few things you can have completely different breads still delicious.  Except for the changes below everything remains the same.

#2  oil used was coconut, 1 1/2 cup sprouted wheat (one degree), 1/2 cup buckwheat, 1/2 cup hemp, (I also used 1 tsp each soda and baking powder) 1/4 cup dark cocoa, (4 bananas)

#3  oil used was avocado oil, 1/2 cup flax with Nopal (cactus) from Kania Linaza, 1/4 cup diced small Incan Berries, 4 bananas, 1/4 cup shredded unsweetened coconut, topping it off with a sprinkle off with sunflower and pumpkin seeds.  Delish!

Kania Linza Canadian Flax with Mexican Nopal purchased at Lees Rite-way in Thatcher, AZ  though I don't know if they still carry it, I keep in the frig - in fact I keep as much as I can fit in the frig.

This another recipe we love.

2 cups wheat pastry flour
1/2 raw honey
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tbsp. cinnamon
1/2 cup (+) chopped walnuts (opt.)
3-4 ripe bananas
1/4 cup plain yogurt
2 large eggs
1/3 cup extra virgin olive oil

Combine all wet ingredients add to it premixed dry ingredients. Spoon into prepared loaf pan and bake 50 -55 minutes or until toothpick inserted comes out clean. Let cool a bit and invert onto cooling rack. (2/20/09)
